Garlic is closely related to onions, shallots, chives and leeks. It is one of the oldest known horticultural crops, and is an essential ingredient in almost every cuisine around the globe. Its health properties are undeniable. While its antimicrobial characteristics serve as a preventive measure or a remedy for colds and other infections, garlic, consumed as a condiment, a rub or eaten separately, may also be used as a digestive aid.

The global garlic market had total revenues of 15.88 billion USD in 2014, representing a compound annual growth rate (CAGR) of 3.4% from 2007 to 2014. In physical terms, the market reached 25 million tonnes.

In 2014, the main global supplier of garlic was China (1,752 thousand tonnes), followed distantly by Spain (124 thousand tonnes) and Argentina (75 thousand tonnes), together making up 93% of total exports.

Australia's garlic market had total revenues of 20 million USD in 2014, representing a compound annual growth rate (CAGR) of 8.6% from 2007 to 2014. In physical terms, the market also showed positive dynamics, reaching 12.5 thousand tonnes, with a CAGR of 4.1% over the period under review.

The Australian garlic market is highly import dependent, with imported garlic accounting for the lion's share of consumption. The value of total Australia's garlic imports in 2014 stood at 19.79 million USD. There was an annual increase of 8.5% for the period from 2007 to 2014. In physical terms, the total volume of garlic was 12.58 thousand tonnes in 2014, 0.69 thousand tonnes (6%) more than the year before.

In 2014, China (9.03 thousand tonnes), as well as, distantly, Spain (1.42 thousand tonnes) and Mexico (1.42 thousand tonnes) were the main suppliers of garlic, together making up 94% of the Australia's imports.

The Australian garlic industry is quite limited due to a small grower base and pressure from China's cheaper imports. China, however, is notorious for using chemicals banned in Australia. What's more, its garlic tends to lack in flavor, and its spotless white color is a result of bleaching, a part of the import process.

Over the last decade, imports from China have pushed Australia's garlic production downwards. Yet, the recent interest of consumers towards fresh local produce and the health benefits of organically grown garlic has encouraged local farmers to introduce a number of improved varieties, and has given hope for enhancing local garlic market prospects in the near future.
