The global bread and bakery market earned total revenues of 234.4 billion USD in 2015, representing a compound annual growth rate (CAGR) of +3.5% from 2007 to 2015. However, in physical terms, the market showed more modest growth, annually rising by +0.6% over the period under review. By 2015, global bread and bakery consumption reached 128.3 million tonnes.

In 2015, according to market research conducted by IndexBox, the leading consuming markets were the U.S. (13.1 million tonnes), Russia (8.7 million tonnes), Germany (6.4 million tonnes), the UK (5.7 million tonnes) and Egypt (4.6 million tonnes) together accounting for approximately 30% of global consumption.

The U.S. bread and bakery products market is gaining momentum. The main driver of growth from 2014-2015 was the increase in demand for bread containing wholegrain, that was also high in fibre, or healthy biscuit and cookie items, and other health-minded type products. Items such as these are becoming increasingly popular with consumers, due to the enhanced uptake of the healthy lifestyle concept.

In the Middle East, competition is uneven, due to product diversity and the large number of informal channels that produce bread. In Egypt, bread is mainly hand-made, and sold unpackaged. Local bakers are in receipt of government support, although there are claims that the use of government flour subsidies is being abused. The Egyptian authorities are considering the introduction of a smart card system to eradicate this problem.
