From 2007 to 2015, global vanilla market consumption decreased by -1.6% annually. The highest annual rates of growth in terms of vanilla consumption between 2007 and 2015 were registered in India, with a +38.8% growth, due to the increased number of vanilla plantations in the country.

According to market research conducted by IndexBox, in 2015, the leading consuming markets were Indonesia (32%), and the U.S. (21%), followed by France (7%), India (5%), Papua New Guinea (5%) and Mexico (5%), together accounting for approximately 75% of global consumption.

With nearly 3,074 tonnes of vanilla consumed in 2015, Indonesia became the world's leading vanilla consuming country. Per capita vanilla consumption in Indonesia was estimated at 11.9 kg/1,000 persons, much higher than the global average (1.3 kg/1,000).

The highest levels of vanilla consumption were registered in Papua New Guinea (58.6 kg/1,000), Indonesia (11.9 kg/1,000) and France (10.0 kg/1,000). India (0.4 kg/1,000) had the lowest volumes of vanilla consumption.
