Abstract

Global production of butter and ghee posted modest, but steady growth over the last few years. In 2015, global butter and ghee production expanded to its peak level of 10.4 thousand tonnes. In value terms it was estimated at 39.6 billion USD, fluctuating wildly over the period under review.

Overall, according to market research conducted by IndexBox, butter accounted for the highest share (62% in 2015) of global butter and ghee manufacturing, followed by ghee (38%). From 2007 to 2015, the output of ghee indicated slightly more pronounced growth, expanding by +3.2% per year. Butter output, meanwhile, increased at slower pace of +1.2% per year over the same period.

India was the key world butter and ghee producing country with an output of about 3,919 thousand tonnes in 2015, which accounted for 38% of total global output figures. However, the list of the leading producing countries differ significantly by product type.

India’s dominance in the global ghee output was even more pronounced, with a share of 78% of total ghee output. It was followed by Pakistan, which comprised approx. 19%; other countries accounted for much lower shares in terms of global ghee output. Usually being made from buffalo milk, ghee is popular mainly in India, Pakistan and some other Asian and African countries, where buffalos are widespread as major milk animals.
As for the global butter production, the U.S. and India maintain leadership in the output levels, each comprising 13% of the total volume in physical terms; New Zealand, Germany, and France (7% each) lagged somewhat behind. The majority of key producing countries also hold significant shares in terms of global butter exports.

Most of the other major producing countries increased their butter and ghee output over the period under review. Regarding the butter output, the average annual growth rates were relatively high in the U.S (+2.2% from 2007-2015) and India (+3.4%). In terms of the global ghee production, the leading countries – India and Pakistan – increased their outputs at a relatively similar paces: each approx. +3.2% per year from 2007 to 2015.
